Irish fruit cake

Irish fruit cake is a type of fruit cake that originated in Ireland. It is made up of strawberries, apples, sugar, raspberries, and whiskey.


A recipe for Irish Fruit Cake is:

Ingredients:

1lb. Cream Flour

A Pinch of Salt

4oz Sultanas

1/2 Teaspoon of Baking Powder

6 oz of Sugar

6 oz Irish Butter

3 Eggs

2 oz Mixed Peel

2 oz Cherries


Method:

1. Sieve Flour, salt and baking powder in to a bowl.

2. Beat butter and sugar together for 5 to 10 minutes to a cream.

3. Add eggs one at a time and continue to beat.

4. Fold in Sultanas, Mixed peel and Cherries. Mix well.

5. Fold in the Flour mixture

6. Turn in to a greased and lined 8 inch tin

7. Bake in the center of oven (350°F) for 75 - 90 minutes.

8. Check cake at intervals after 60 minutes.

9. Let cake cool a in tin then stand on a wire tray. Cover with tea towel.


This particular version of the reciepe does not include whiskey. If you were to add it, it would be added with the butter and the sugar in the second step. About one quart should be used.
